Zucchini Bread

2 tsp baking soda 1 tsp salt 1/2 tsp baking powder 3/4 cup chopped nuts(optional) 3 eggs 2 cups sugar 1 cup oil 2 tsp vanilla 2 cups shredded zucchini 8 oz can crushed pineapple( drained). |
Beat eggs in large bowl. Add sugar, oil, and vanilla. Stir in zucchini and pineapple. Add all the combined dry ingredients at once. Mix well. Spoon into two well greased and floured pans. Bake at 350 degrees for 1 hour. Test for doneness with toothpick. Cool in pan for 10 minutes before removing. Enjoy!! |
